Pumpkin + Cranberry Cookies


Hello everyone!!

I LOVE pumpkin! So in honor of the plethora of pumpkin all around, I have made a pumpkin cookie perfect for the trail!

Tested this recipe out with the bae and care coordinators at work, so normal people approved 🖒. The bae gave his usual feedback of it being tasty but it’s still “bird food” – so tough to please the manly man!! He hates oatmeal 😀. My coworkers on the other hand loved it, described as “a healthy and hearty snack or even a quick breakfast.”

My intention completely, who doesn’t love a cookie for breakfast?!?!


The whole recipe makes 9 cookies when using about 1/4 cup scoops, but you can make them bigger or smaller.

  • 1/2 cup pumpkin puree
  • 1 cup oatmeal
  • 1 tsp cinnamon
  • 1/3 cup dried cranberries
  • 1/4 cup pumpkin seeds
  • 1/4 cup raw shelled hemp seeds
  • 1 Tbsp honey
  • 1 Tbsp sugar
  • 1 scoop vanilla protein powder
  • 1 egg
  • 2 Tbsp coconut oil

The whole recipe provides 1422 kcal, 62 g protein, 139 g carbohydrate  (19 g fiber), 72 g fat and 145 mg sodium.

Each cookie is roughly 158 kcal, 7 g protein, 15 g carbohydrate (2 g fiber), 8 g fat and 16 mg sodium – when making 9 cookies from the batch.


My favorite cold/dry “meal” yet!
