Pumpkin Granola

Hello Everyone!!

Let’s start off with the back story… we had a lovely intern at the hospital and she would bring granola for us to snack on – and boy did we love her for it, so delicious and nutritious!! Snacks are a must, no one likes a H-ANGRY dietitian 😉.

So what better way to count down [2 weeks and counting] to my weekend getaway…. than a pumpkin inspired granola! I love all that the Fall season has to offer, nothing is more delicious than the Fall Harvest. I tried to incorporate some fall flavors. Naturally, this granola recipe is not simple. I usually try to keep my recipes simple, but granolas are medleys after all.

Without getting into specifics, the medley I used to create my new favorite granola:

  • Gluten Free – Oats
  • Organic Raw Shelled Hemp Seed
  • Chia Seeds
  • Brown Sugar
  • Cinnamon
  • Organic Maple Syrup
  • Organic Vanilla Extract
  • Organic Virgin Coconut Oil
  • Pumpkin Puree
  • Pumpkin Seeds
  • Walnuts
  • Semi-Sweet Chocolate Chips
  • Cherries
  • Protein powder


Granola is easy, mix everything you want together and watch the magic unfold.


The main reason granola works so great in the “office” or on the trail is its sustainability at room temperature. It is also pretty light while being nutrient dense, take a look at those nutrition facts, a lot of bang for your buck – or nutrient/weight:
